The culinary traditions of both Lazio and Campania are characterized by a vast number of ingredients and recipes, whose origins are lost in time and which have gained  proselytes all over the world. In fact, it is very hard to find areas of the world where “pastiera”, “pizza”, “pasta all’amatriciana” or “alla carbonara” are not known! Through the pages of this work of mine, I will try to guide you in a “virtual walk” among these dishes as well as others, which I consider “timeless”. In other words, dishes which are the product of the delicious cooking of our grandmothers, but always reinterpreted in a modern light, through small variations or simple suggestions which, however, do not alter the “memories” of our palate… I would like to conclude by hoping that more and more colleagues will follow this path and instead of thinking only about the gratifying, yet momentary emotions of the “Super – Star Gourmet”, they will also give their contribute to innovation through tradition…this is the only type of cuisine which does not last “a brief moment”.
